Overview:
Prep Cooks are key members of Fjord’s kitchen team, responsible for preparing ingredients, supporting daily food production, and ensuring the kitchen runs smoothly. Prep Cooks help set the stage for high-quality, made-to-order meals by maintaining organization, consistency, and food safety standards.
This is a hands-on, fast-paced role that requires strong attention to detail, teamwork, and a commitment to cleanliness and efficiency.
Core Responsibilities:
  • Prepare and portion ingredients according to Fjord recipes and prep lists
  • Wash, peel, chop, and store produce, seafood, and other ingredients as needed
  • Label, date, and organize prepped items to ensure freshness and minimize waste
  • Maintain a clean, organized, and well-stocked prep station throughout each shift
  • Assist Line Cooks and kitchen team with food production and plating during service
  • Follow all food safety, sanitation, and allergen protocols
  • Support end-of-shift cleaning, breakdown, and restocking procedures
  • Communicate with kitchen leadership about prep needs, shortages, or quality concerns
Qualifications / Requirements:
  • 1+ years of experience in a kitchen or prep role preferred
  • Ability to follow recipes, prep lists, and instructions with consistency
  • Comfortable using standard kitchen equipment and tools (knives, slicers, mixers)
  • Strong multitasking and time management skills
  • Comfortable standing for long periods and lifting up to 50 lbs
  • Dependable, punctual, and team-oriented
  • Food handler’s certification preferred or willingness to obtain within 30 days

  • Completes all prep tasks accurately, efficiently, and on time
  • Maintains cleanliness and food safety standards throughout each shift
  • Demonstrates consistency in ingredient preparation and portioning
  • Communicates effectively with teammates and kitchen leadership
  • Supports kitchen operations during peak periods and adapts to changing priorities

Prep Cooks who demonstrate strong execution, reliability, and teamwork are eligible for advancement within Fjord’s kitchen operations track:
  • Line Cook – Prepares menu items and supports kitchen production during service
  • Shift Supervisor – Leads kitchen operations during scheduled shifts, supports onboarding and quality control
